The Southern Highlands give good garden. More than pretty, they’re impressive. And so is this gorgeously manicured gin.

The scent of rose and lavender. Savoury notes of rosemary, thyme, orange peel and fresh mint. Backed up by cress and pink peppercorns. Heaven.

Garnish with your garden

You can dial up the floral, citrus or herbaceous layers in your G&T depending on what you snip from your garden.

Try thyme. So, so good. Rosemary, sage, mint… each bring out a slightly different delish.

Green With Envy

  • 50ml Garden Envy Gin
  • 25ml Fresh lime juice
  • 15ml Early grey tea syrup
  • 1/3 inch Cucumber and 8 basil leaves
  • Hot sauce (1 teaspoon for 10/10 spicy, adapt for own taste)
  • Pinch of salt

Muddle cucumber & basil leaves, shake all ingredients for 10-15sec. Double strain into frozen glass with 1 large ice cube. Garnish with basil and cracked pepper.

  • 50ml Garden Envy Gin
  • 20ml Sweet Vermouth
  • 10ml Benedictine
  • 3 Dashes of Peychauds Bittersr

Stir over ice. Strain into frozen glass. Garnish with a sage leag & 1 absinthe spray.

Berrima Tea Party

  • 50ml Garden Envy Gin
  • 20ml Cammomile Tea Syrup
  • 20ml Lemon
  • 6-8 Mint leaves

Shake and Double Strain in a frozen glass. Garnish with a mint leaf.

New Pony Negroni

  • 30ml Garden Envy Gin
  • 30ml Campari
  • 30ml Cinnamon & Orange Tea infused Sweet Vermouth*

Stir over ice. Strain into a frozen glass with 1 large ice cube. Garnish with orange peel & a cinnamon stick.

*5 Cinnamon orange Tea bags in 750ml bottle of sweet vermouth. Stir well. Stand at room temp. for 90 minutes, stirring occasionally. Take tea bags out.

Not many gins have most of their botanicals grown and picked in a botanic garden. But not many gins are from the Highlands, and few botanic gardens are like this one. The 15-hectare site in Bowral is run by the community, for the community, and it’s one we love to help grow.
